Hello,
I'm french, sorry for my bad english.
I've got 2 x XAV5601 CPL Powerline 500 gigabit.
I would like to buy one other CPL which will be compatible with XAV5601.
I would like to be sure that my network will remain in gigabit.
Which one do I choose ?

Any recent Powerline plugs will work.
Any maker. But Netgear is probably simplest.
You can only buy packs of two.
When you add new plugs, read this:
Adding a powerline adapter to an existing powerline network | Answer | NETGEAR Support
Maybe there is a French version somewhere.
