Not seeing the space used by Snapshots on the Shares page. Has this been removed?

Depending on your use case using quotas on the volume may/may not be appropriate.

Note: an OS Re-install disables quotas on the volume.

Check the volume settings wheel.  Generally this is a result of quotas being disabled there.
