What is the suggested RN214 Firmware update path from the current; 6.1.0 (RC1)

I have searched and read for an hour and not finding EXACTLY what I am looking for. Before I install ReadyNASOS-6.9.5, and possibly brick this NAS, I would like to request a suggested firmware upgrade path for the RN214.

PURPOSE: EMBY Media Server installation requires 6.8.0 or higher.

Mistakes were made. 

I have 6.10.0 (RC1) not 6.1.0 (RC1)

A related issue. I have attempted to install Emby but I get errors. Is it ok to downgrade from the 6.10.0 to 6.8.0? (2019.02.18)

No, and you can't downgrade to 6.9.x either.
