I see the same behavior but it also happened under iTunes 10. It started for me once I moved my iTunes library to my NAS. I found a thread on Apple's forums and found a fix. However, I have not seen the issue with music, only movies and TV shows. In addition to having no artwork, I am unable to play those files on my iPad or iPhone via Home Sharing but they will play fine via my AppleTV. To fix the artwork not appearing and the show being unplayable on my mobile devices, I delete the movie or TV show but DO NOT delete it. I then reimport the movie or TV show back into iTunes (I find the errant movie or TV show in Finder and drop it onto the iTunes window).
That re-adds the file to the library and it will also bring back the correct artwork. It also makes the file playable on my iPad and iPhone.
