I have an 8 bay NAS that has 8 8TB drives (dual redundancy). I want to start replacing them with higher capacity drives. Normally with RAID 5 once I put two larger drives in, I start to see higher capactity. Is that the same case for RAID 6?

No, you'll see the increase after you insert the 4th larger drive.
