@evan2 - As I mentioned before that we have replaced the fans to less noisy ones but they do not register on the system that is why they show as 0RPM.... howerver we have done all the test with the original fans anyway and the results were still the same - so we know its not a fan problem.
So what I have done now is removed all the drives, and booted up with the boot menu and selected OS REINSTALL. It did reinstall the OS and reset all the settings etc etc. I then added one drive at a time and created a simple shared folder on each drive. I disable add services except SMB. I have enabled ENHANCE MAC OS as well because we only use Macs. I then created a backup from the other RN 2100 to the RN 2120 on one drive for every hour - than ran fine. I then created another backup from a Mac using Carbon Copy Cloner over the network for every 4 hours - this ran fine. Lastly i creted a backup to the 3rd drive also using CCC to run every 2 hours - also ran fine.
The system stayed connected for at least 8 - 10 hours. After a while it just lost connection again. I seems like it is probably not software related. I hope that Netgear can sort this out for me as it is still under warranty on the hardware side.
I will keep you guys updated.

Some good news : I managed to find out who is the agent for South Africa and it appears to be Duxbury. Anyway I called them and they said I can take the NAS in for repair and if it is faulty they will replace it with a new one.
BTW : Its been 3 hours of continuos copying with SMB Legacy enabled - No crashes yet.

UPDATE : Netgear (Duxbury - South Africa) replaced my faulty ReadyNAS 2120 with a ReadyNAS 2304 unit. GREAT SUPPORT !!!! Thanks Netgear

Thanks for the update. Note that the 2304 is a x86 unit whilst the 2120 is an ARM unit. So it's advisable to put a scratch disk in the 2304, update the firmware to at least as new as what was on the 2120 v2 (if not already running it), verify the update is successful (i.e. comes up on new firmware after the required reboot), power down, remove the scratch disk and move your disks across (keep the disk order the same).

I think you'd have been better off just using RAID-10 on the primary NAS - which is basically what you are doing, except the system is mirroring the two RAID-0 groups instead of requiring backup jobs to sync them. RAID-10 would keep the data available during routine disk replacements.
Perhaps use RAID-6 on one (or both) backups, since it is more robust, and the reduced write speed isn't as critical on the backup device(s).
