expanding my nas with different size hd
i'm adding a 8tb drive to my current 5tb single-drive volume. I am also switching to X-Raid due to the addition as well. my question is regarding the capacity, will i be able to use the leftover space on the 8tb?
my understand with raid is that the 5tb will be sync or mirrored over to the 8tb. with x-raid i should be able to still make use of the 3tb left over from the 8tb drive.

No you can not - because there is no way to make that 3 TB redundant. You'd either need to replace the 5 TB drive with an 8 TB one, or if you have an empty bay you can add a second 8 TB drive.
The XRAID capacity rule is "sum the disks and subtract the largest".
