Can I asign, or indeed should I, a static IP to my mesh extender within my home network. All my other devices have an asigned IP, or should I let my extender reamin with a dynamic IP?

Up to you - either reserve a static IP on your DHCP or put up a fixed IP if you can't resist. Experienced network admins sometimes do both. Easier to locate the device WEb UI on the LAN on a known IP either way.
