Chia seeds are commonly used as an egg substitute by vegans and others who have egg allergies because of their capacity to absorb water and give dishes a gelatinous consistency. Simply combine 1 tablespoon of chia seeds with 3 tablespoons of water to produce a "chia egg," then chill for 15 minutes. You can use this in place of eggs on a 1:1 basis.
