I have the same issue. 2.4g is always okay. 5g keeps dropping out.
I tried different channels but still the same problem.
Coincidentally I just added a google nest mini to my older google home and google mini.
I went back 1 version of firmware. Same issue.
I scanned the wifi band 5g around me and it is not crowded.
Now I have switched all my devices to 2.4g and have no problems.
What gives with 5g

That does seem to fix my problem. I have the 5g and the connections seem solid now for 24 hours.

You switched versions of firmware.
Which version are you on? Numbers help especially with the R7000. Its notorious for the newer firmwares not functioning well. The agreed upon stable version is the .42 version.
If you downgrade to it, make sure to do it over a hardwired connection, factory reset after the downgrade, and manually reinstall (not from backup). this will give you the best results with the R7000

I downgraded from 1.0.9.88 to R7000-V1.0.9.64_10.2.64.
I will download version R7000-V1.0.9.42_10.2.44 and try what you suggest.
Downgrade over wire. Factory reset after downgrade. Manual setup.
We shall see! Crossing my fingers....or going shopping!
