Try disabling AX and rebooting the router.
It wouldn't be the first device that had issues with AX and with it getting a new update, maybe there's bugs in it.

Will it connection if you disable security on the wireless? Its not a good option but just for testing purposes.

Phone connected to router no problem when acting as an open router.

that usually points to a bug with the nokia upgrade. Especially since it worked before the upgrade.
running an open network is usually not the best idea. You could setup the guest network as open so at least it has some network isolation.
