I just purchased an Orbi 960 router and downloaded the App. In the parental controls you can set up a bedtime for weekdays and weekends. If you turn it on for Saturday and Sunday 8pm to 7am is that off at 8pm Saturday and Sunday nights then on at 7am Saturday and Sunday mornings, or is it off at 8pm Saturday and Sunday nights then on again Sunday and Monday mornings at 7am?

That's really best addressed in the section where they talk about parental controls. It isn't tied to the device you use, your Orbi 960.
