Part of the problem is that there are very few, if any SO-DIMM 1GB+ DDR memories. I never did see one, and people claim they exist, but cant link to one.

They don't exist, to my knowledge. Most people claiming they did will link you to DDR2, not realizing that DDR != DDR2.
High density DDR2 does exist, on the other hand. But it's ONLY supported by older AMD CPUs. Not Intel, not anyone else.
For about $30 you can upgrade older AMD AM2 systems with 4 DIMM slots to 16GB, cheaper than any DDR2/DDR3/DDR4 memory upgrade out there. I know someone that was rocking an old Athlon X2 6000+ (3.0ghz) up until late last year. Recently he got a used Phenom II X4 for it for ~$50. He's only put about $400-500 into most of the parts in his PC, and he's had it for over 6 years now. He does buy new videocards occasionally, so probably $500 or so spent there. But still, under $1000 for over ~6 years of usage, and a PC that still plays modern games mostly okay? He did a crazy good job cheaping out. Even has a 256GB SSD in it.

Well, the NV+ is ddr, and I believe is limited to 1 GB ram anyway.

In any case 1GB RAM should be more than enough for using the NV+ (v1). If it's not then you probably are affected by other bottlenecks e.g. CPU performance as well, and would benefit from moving to using a new ReadyNAS.
