Add on or replace
I bought a AC3000 (RBK50) in 2017 and am moving to a larger home. I wanted to add on another satellite but I'm not sure if any of the new ones are backward compatible. Should I buy another satellite or buy a new system?
The RBR and 1 RBS would be enough, depending on building material however. Wood and sheet rock is ok. Concrete and steel will inhibit wifi signal travel.
Placement and distance of the RBR and RBS is important for good operation. 30 feet or more is recommended in between RBR📡 and RBS🛰️ to begin with depending upon building materials when wirelessly connected.

I would first try the RBK50 in the new home out first then see if you need to add another RBS.

What is the size of your home? Sq Ft?
What is the distance between the router and 📡 satellite(s)? 30 feet or more is recommended in between RBR📡 and RBS🛰️ to begin with depending upon building materials when wirelessly connected.

The home is about 3500 sq feet on 3 levels (city-style home). We stream our TV so I want to make sure the signal is as strong as possible. I was assuming I'd need one device per floor.
