I have a newer Orbi router with 2 satellites
I'm in a similar position... I have a newer Orbi router with 2 satellites made in the past 2 years and a pair of Sonos One's with a sub. The sub is hardwired but the two One's are in a pair so "Sonos Basement" is all 3 devices. On rare occasion my wireless satellite in the room with the sub + one's will go out/freeze and usually recover within 5 min or less, but not always. Unplugging the Orbi satellite always resolve as my devices reconnect to the main router or the other satellite. I checked today and saw my Orbi was on auto for 2.4Ghz and my Sonos setup was on Ch 11. I did a wifi scan and saw a neighbor using 2.4Gh Ch 1 so I moved the Orbi 2.4Ghz to Ch 6. Will wait on results but am wondering what your results were after you made your changes?

What model Orbi do you you have?
Best to contact Sonos about issues with there product as well.
Best to keep channels far appart if devices have there own broadcast radios.
