I don't have a SuperHub3, but I am almost certain that you will have to make changes to the SH3 config manually -- Orbi will not adjust SH3 config automatically. As you suggest, you will want to put the SH3 into modem mode and turn SH3 WiFi off.
Note that the stability of the current version of Orbi firmware is in question -- hopefully there will be new FW out there before you go live.
