What channels are you using?
Try 1, 6 or 11 on 2.4Ghz and any unused channel on 5Ghz.
Is Daisy Chain, MiMo and Fast Roaming enabled? Try them disabled.
Try a factory reset on the system as last resort and set up from scratch:

The 2.4Ghz band (which most devices were connected to and dropping out from) was on Auto. I ran some Wifi Analyser tools today and it seemed to be on Channel 11 and there was a decent amount of neighbouring activity on 11. I switched it over to 4 (Any issues with using 4?! It was clear whilst 6 had a bit of activity).
Daisy Chain, MiMo and Fast Roaming are disabled. I'll keep them that way for the time being. I'll give the fixed channel a few days to see how it responds then try the reset. Thanks for the advice!

Use 1 or 6. 1, 6 and 11 are primary channels to use, All other channels are sub channels that are internally used by the wifi radios. You can try 4 for not and see however give 1 and 6 a try if there not busy.
