Replacing router and 2 access points with new Orbi system

at this stage the orbi does not do wired backhaul so your plan will not work , it has been suggested some time in the future wired backhaul may be added but i would splash $350 on hoping it will happen
if you already have structured ethernet i cant see the logic in using any mesh / DW system as a standard router and access points with the same ssid name will pretty much do the same thing but better as it doesnt need to rely on wifi at all apart from the clients connecting
the Linksys WAP610's are pretty old now and only wireless N , prob just a better idea to replace these with some new wireless AC ap's , most have a preference for the ubiquiti unifi AC ap's
for your requirement you need to go for WAP and wiredswitch POE.. That makes the better. You will have all the wired devices connecting via switch of giga speed and POE to the Access points for wave 2 series from Netgear would cost you 200-250.
So both wired and wireless smart devices are covered.
