Hello there, I have recently purchased a Nightgear Nighthawk M6. I am hoping to set it up for sending FTP files from my Nikon Z9 to my Macbook and to find out the best and most efficient settings...

Assuming you operate a Nikon WT-6 or WT-6A, before defining the wireless profile select the desired WiFi band to be used:
[Wired LAN/WT] > [Options] > [Router frequency band] and choose the desired band. Select [2.4 GHz] or [5 GHz] to connect only to networks operating on the chosen band, [2.4 GHz/5 GHz] to connect to networks operating on either band.
Older Nikon WiFi Wireless Transmitters might use a feature named WiFi Direct (and designate it misleadingly as Access Point Mode in the docs) - which might be restricted to 2.4 GHz because of regional/worldwide regulatories.

In this case, the M6 does serve as a wireless access point for the Z9 (operating in Infrastructure Mode 8-) ), the MAC can either be connected to the WiFi, or by Ethernet which needs to be enabled: Advanced -> Mobile Router Setup -> Ethernet -> check to enable, probably allowing some better performance than sending large amounts of photos and videos over the WiFi twice (Z9<->M6 and M6<->Mac) - permitting you have a Mac with a built-in Ethernet LAN port) to the M6.
I'm not deep in the M6, hope it does work in general like a common WiFi router.
