Nighthawk M6 5G WiFi 6 Mobile Router Turn Specific Channels On/Off
Is it possible to turn specific channels off across the 5G band on this device? Or am I limited to turning the 5G or 2.4G on or off as a whole?

If you use the netgear mobile app you can go in through wifi settings and change the channels.
Just tested it to ensure on my MR6110

Yes. You can manually set which WiFi channel to use on 5G or 2.4G. But you can only set the device to use one certain channel.
