Of course the VLANs work as expected: Each VLAN does make a dedicated network, leaving tiny details like STP and RSTP alone, each behaves like a unmanaged switch for each network.
You need to look into the IPv4 routing, being on an additional fully fledged router, or limited to some extent on the switch itself.

What do you mean exactly by IP4 routing? Like is there a specific setting I should be looking for?

Show us the switch IP config and the VLAN Routing config.
Does your Proxmox network config require a trunk port, so tagged?
Also add the exact switch model and hardware version and the firmware in place.
Shuddering a little bit reading about an unmanaged switch involved here - for what should be dedicated networks and dedicated IP subnetworks.
