when wall mounting these switches the the port orientation matter? Can they be sideways, up or down facing?

No.
Just so long as you can get the ethernet cable plugs in and out of the switch.

It doesn't matter where it faces. As long as the ethernet cables can be plugged in/out of the switch without the cables being bent you're good.
