Currently running with two satellites SXK50 with an SXR50

I have the same issues as described, I see it with my pixel 10 pro, and an older pixel 7 device.  Wifi has become unusable at home with Netgear orbi hardware as the phones will randomly decide that 5g is better than 1 gig fiber speeds.  I will start not recommending to friends and family to use Netgear mesh systems.  Currently running with two satellites SXK50 with an SXR50 with the latest firmware and updates.  I did see other postings about disabling various network settings, I will respond if they seem to help (auto switch to mobile network / optimize network for battery life).
