Change IP/SUBNET
I have the netgear orbi rbr750 - my current IP/submet is 192.168.5.XXX
Set-up is up and running, but I need to change that to be a 172.16.5.XX
How do I go about changing this?

You can change that by logging into the RBRs web page with a web browser and making that change under Advanced Tab/Setup/LAN Setup.
And will the starting & ending IP auto-update based off the change I make to the IP Address?
Yes. Recommend setting the default DHCP IP address pool range to the following after applying and a factory reset: .#.100 to .#.200.
