Hardware vendor wants 2.4Ghz only; no negotiation between 5 and 2.4
Orbi 6 router with 2 satellites.
A client has Sonos speakers install throughout his house.
Their technical support wants the router to not auto-negotiate between 2.4 and 5Ghz. And they call this 'steering'.
Where might I find this setting? Is it called steering or the RSSI setting? I saw RSSI in other similar discussions. Or is it easier just to turn off the 5Ghz and just have the 2.4?

Good Grief, no. It is impossible to "turn off" the 5G WiFi signal on Orbi routers. Plus, that would reduce the capability of the entire system.
Sonos speaker systems (not a single speaker here or there) are a complicated topic. My Sonos One is perfectly happy, although I get annoyed when it will not respond to "Alexa... Stop".
Perhaps if you describe the issue, people who have experience with Sonos can help.

Orbi has band steering and it can't be disabled. Orbi will always prefer 5 GHz and will try to push capable devices towards 5 GHz if possible.
I have 10 "Sonos" speakers and the whole system works well with Orbi.
You proable just need to fix the 2.4 and 5 GHz channels and select channels that are not being used by Sonos.
Do you have any wired speakers to Orbi? If yes how many?
