New (refurbished) Rbk752 - inconsistent speed/link rates

Hello, I upgraded my old RBK50 system to a refurbished RBK752 unit. (the RBK50 was refurbished as well and didn't have any issues for about 3 years so I had faith in the new refurbished one) Home is about 1800 sq ft and the router is downstairs on one end of the house and the satellite is upstairs on the other end of the house with the wireless backhaul showing "good". Gigabit speed from spectrum (cable modem). Running firmware 4.6.9.11. (Just noticed there's a newer firmware available which I'll manually install once I get back home.)

I set up the RBK752 and I'm noticing on my Samsung Galaxy S22 Ultra that the link rate from both the router and the satellite will change often. Sometimes it's in the 600s sometimes it's lower but most commonly sits at 864. The old RBK50 had its link rate sitting at a constant 866 and would hardly ever fluctuate.

My phone shows full wifi bars with a little 6 indicating it's running wifi 6. In speed tests it's extremely inconsistent, sometimes it's in the 300s and sometimes it ramps up to 800mbps. This is all around the same distance from the router or satellite (about 10 feet away at maximum). The speed test on the orbi app shows that it's receiving around 900-960mbps.

I also notice when I look at the network map in the app that only two things have full wifi bars (blink camera modules), everything else is one or two bars despite being very close to the corresponding router or satellite.

When using the wifi analyzer from the orbi app to look at my S22 ultras signal it fluctuates between 70-100% signal strength.

So, I'm wondering, is it normal for this much fluctuation even though my old RBK50 didn't seem to fluctuate like this? Should I be showing more bars for connection to things in the network map? Why would my link rate be so low and inconsistent (lower than the RBK50)?
