Might try a different cable if you have something just to test to see if the WAN port can get back to 1000Mpbs.

This seemed to be the solution. Bad cable leading from ONT to router. Was a flat ethernet cable that was provided by Verizon. Maybe there was interference building up with it since the wires aren't twisted? Not sure but been getting consistent speeds without rebooting router. Thanks!

Ya those flat cables can be exposed to external interferences.
Glad the change worked.
Be sure to save off a back up configuration to file for safe keeping. Saves time if a reset is needed.
