The model of modem/router from the ISP is a Pace 5268AC.
Our home is single story and ~2,000 sq ft in kind of a triangle shape. We have the router at one corner and the satellites hardwired with cat6 cable at the other points of the triangle. The signal shows up strong on all of our wifi devices. The house is hold with plaster walls and no insulation.
The satellites are connected directly to the router with the cat6 cable. There is only one 2.5Gb port on the router and one of the satellites is connected to it with cat6. The other satellite is in an ethernet port which is probably 1 Gb. The switch is a Netgear GS308. It is connected to the router and devices other than the satellites are connected through the switch (computers, tv streaming box, etc.).
The settings are 2.4 Ghz auto, 5 Ghz 48, 6 Ghz 69
I do have the IoT network enabled but don't have anything connected to it. I do not have the 6 Ghz enabled.
There are competing wifi networks 3-4 but Orbi shows "Good" or "Great" on every channel in the app.
The orbi router will show a magenta light when it has lost internet. However, not all devices will lose internet at the same time. Right now the light on the router is magenta. My phone does not have internet from wifi. But the computer I am using that is connected to the satellite which is connected to the router by wire is fine. The google home device on my desk that is wifi still has internet. If history is a guide, eventually every device wired or unwired will lose internet and I will need to power cycle everything.

Well PINK on the RBR means that the RBR isn't getting good internet services from the ISP Modem or there is a problem with cabling between the modem and RBR.
For the size of home, only the RBR and maybe 1 RBS would be needed.
Have you tried bridging the modem and running the RBR in router mode?
What is the CAT# lan cable your using between the modem and RBR? CAT6 is recommended.
I would disable IoT network if your not using it.
