RBS750 WiFi drops despite AirPort Utility showing signal

I've got an Orbi RBS750 setup with 2 satellites, using ethernet backbone into the router as well as into each satellite. I get regular WiFi drops from each device. Using the iPhone with AirPort Utility I see a strong signal (maybe -33Db) against the router's SSID but the phone does not reconnect for a while, then eventually does. I have a HomePod that drops at the same time but sometimes reconnects more quickly.

There is direct line-of-sight to the phone and HomePod in my home office setup so I don't understand why I'd get any WiFi drops there.

Separately the other satellite does have to go through a fairly thick wall to get to one room, and reception there isn't great. But we do also get drops in the same room as the satellite.

Orbi app fails to detect the product a lot of the time with "WiFi not detected" even when I'm on WiFi and using internet. Anywhere access also often fails for no clear reason.

Finally I often get about 100Mb/s when I do connect, despite the wired connection (passthrough from the satellite) giving 300Mb/s (which is what I'd expect from my ISP). It's not clear why the speed is so low.

Given the cost of this setup I'm pretty disappointed with the Orbi. Is there anything I can do that might help improve things or any advice people have for me?

What is the Mfr and model# of the Internet Service Providers modem/ONT the NG router is connected too?
Be sure your using a good quality LAN cable between the modem and router. CAT6 is recommended.

What is the size of your home? Sq Ft?

What is the distance between the router and 📡 satellite(s)?

How are the RBS connected to the RBR via ethernet? Directly to the back of the RBR or is there a LAN switch in between them?

What is the Mfr and model# of the ethernet switch in the configuration?

Does this happen with the RBS turned OFF?
Does this happen with both wireless and wired devices?
What channel configurations are currently set on the router?

Any Wifi Neighbors near by? If so, how many?

Has a power off for 1 minute then back ON with the ISP modem and router been performed since last update?
Be sure to restart your network in this sequence:
    Turn off and unplug modem.
    Turn off router and computers.
Plug in and turn on modem. Wait 2 minutes for it to connect.
Turn on the router and wait 2 minutes for it to connect.
Turn on computers and rest of network.
