What information is restored on RBR850 when restoring from backup

Yes, when a backup configuration is loaded, everything returns.
WiFi credentials (SSID/password)
LAN Setup (IP assignments)
Channel assignments
OpenVPN configuration
.... everything.

You'll need to do more troubleshooting to verify you actually have a problem. More details would be needed and troubleshooting to check and see where the real issue is issue is. Claiming something isn't working for you doesn't help you or validate claims of v7 FW not working. Seems like not enough troubleshooting or giving details to what the real issue is needs to be given. Not everyone has had issues with Orbi systems and we've been able to help those find the real issues and get them solved as well.
If you are having issues with the RBR disconnecting, then something happening between the RBR and your ISP. Seen other with NBN have issues at this level.
Try disabling IPv6 on the RBR.
Try using custom DNS services instead of detected ISP DNS.
Try FW V.21
There any router built in to the ISP Modem by chance?
Be sure to use good quality LAN cable. CAT6A STP is recommended.
I've had my 850 series online for over 30 days on v7 FW with out issues. It's solid and worked great for my system when I had it online:

I'm not on NBN either.
No body said you had to update FW as well.

I work in IT and have done for most of my working life. I'm not saying I'm an expert (in fact far from it) and definitely not with firmware but I know enough to be able to troubleshoot issues. I've done enough troubleshooting to know that it's not an issue with my ISP. If there were any issues between my RBR850 through the NBN modem to my ISP then the 4.x firmware would cause issues but I have been running that for many months without issue. As soon as I update to the version 7.x firmware I have issues. This is the same as what others have reported and have never been able to fix according to their posts here in the community.
As to your troubleshooting suggestions which I do appreciate (as it's always handy to make sure that I have tried anything that might help) I can address these
I can confirm that IPv6 is disabled
I have tried using the Google and Cloudflare public DNS servers with luck
I have tried FW v.21 and have the same issue occur
My RBR850 connects directly to the NBN modem using the WAN port (there is no other option but to do this as without the NBN modem I can't connect to my ISP)
I have changed the LAN cable between my RBR850 and the NBN modem a number of times (and even bought brand new CAT 6 cables) and get the same issue each time when using the v7.x firmware
All my RBS850 satellites are using the Netgear Wi-Fi backhaul network to connect to the RBR850 so LAN cables aren't a factor there either
And I agree that no one is telling me or forcing me to update my firmware but as I mentioned I work it IT and part of my role is to make sure that my systems are at the latest levels as they usually include security updates/patches to ensure that my systems are secure and this is what I am trying to achieve with the Netgear firmware update for my RBR850 and RBS850s. The 7.x firmware also enables access to the IoT Wi-Fi network option which I would like to utilise for my Home Automation.
If you have any other suggestions I would be more than happy to hear them and be very appreciative too as this problem is driving me mad and I would love to have a resolution for it

How was the RBS and RBR updated to v7 FWs? Manually or via AU?
What is the brand and model # of the ISP modem?
Something else you might try with v7 FW loaded and see if this changes the behavior, install a non managed 1Gb LAN switch between the modem and RBR. Connect just the modem and RBR to this switch. Nothing else.

I performed the steps outlined in the following link to manually update the firmware on my satellites and router

My RBR850 is connected via its WAN port to the NBN box Every house in Australia that is connected to the NBN has a connection box supplied by the NBN that connects the premise to the NBN and this is classified as a modem but it isn't something that you can swap out with something that you or an ISP put in. It is just how you are connected to the NBN
I have tried putting a non-managed switch between the RBR and the NBN box but this made no difference.
All these are suggestions that have been provided to others that have had the same issues and looked for help here in the Communities. I have looked at all the ones that I have come across and tried all the suggestions but had no luck in getting anything to work. I followed all these suggestions before trying the last option to do a factory reset which hasn't worked either. I have also tried the suggestions since doing the factory reset and nothing is working. The only thing I haven't tried that others who had the same issue is to purchase a different mesh system that isn't Netgear. The others that have done that have all said that they aren't having issues any more.
The common factor seems to be the Orbi mesh system and FW 7.x

Well, sounds like a interoperability between FW v7 and your modem/box/ont. Something NG will have to review. You'll have to contact support and open up a ticket with them.
Keep using v4 FW as it seems to not exhibit this issue.
Find something else.
