Have resolved my issues. Might help others so here are my fixes:
1: Guest WiFi not working when wired into my cisco switch.
Fix: Per the support sheet passed on to me by Furrye38 this was resolved by applying VLAN ID 4091 to the ports used by the RBS and RBR.
2: Odd and erratic performance issues.
Fix: It turned out my switch had a root bridge setting to use a Sky TV box so all traffic was going here rather than the switch acting as the root bridge. This was reset to using the switch itself.
3: Connectivity to some web pages would not function or would be incredible slow when my PC used a wired connection but was fine when using WiFi.
Fix: This was caused by IPv6 being enabled on my ethernet adapters but disabled on the WiFi adapter. Disabling IPv6 on the ethernet adapters resolved this. A better solution for this issue would be to disable IPv6 on the internal LAN of the RBR970 as otherwise I need to disable on all devices. Is there a way of doing this?

Anything wired into the switch works perfectly. This is a wifi issue.
With my original 970 Router (which broke) I had all the satellites connected to each other via a 10Gb switch and Cat8 cable. In that configuration I had devices losing their connection and then reconnecting. I saw a thread where it was suggested that this method could cause issues and to use the backhaul instead. The Router then died so couldn't test that theory but with the replacement I am using backhaul between them all so no cables or switches, other than the one connected to the Router for my hardwired devices.

So What is brand and model# of this swtich?
So currently the RBS are wireless or ethernet connected to the RBR?
I recommend doing the following, doing a factory reset on the system using this process: https://community.netgear.com/kb/en-orbi-knowledge-sharing/orbi-systems-manual-factory-reset-process/2456340
After the system is set up again, have Guest Network enabled. Have ONE RBS wirelessly connected to the RBR. Turn OFF ALL other RBS.
Test to see if any devices will connec to the remote RBS on the GN SSID.
I activated GN on my 970 series and devices are connecting at the RBS:
RBS are currnetly ethernet connected to the RBR via non managed 10Gb switches.
