As far as distance between mesh elements goes, that is mostly a guide (intended to prevent interference). In some environments you might need to put them closer. Central chimneys, concrete walls, large appliances, ducts and pipes can all block wifi.
I'd start by installing a wifi analyzer on your phone. You are looking to get about -65 dbm (or better) for your client connections throughout your home but not getting more than -30 dbm from two mesh elements in any location. Generally, competing wifi signals stronger than -30 dbm are strong enough to create interference.
Turn off both satellites, and use the analyzer to measure your signal strength to the router. Ideally you are looking for places where the 5 ghz signal strength drops to about -50 to -60 dbm. Those locations would be good for the satellites. You can then put a satellite in one of those spots and repeat the process.
After the backhaul syncs, you can check that backhaul status is reported as "Good" in the web interface.
There are several good free analyzers available for android. Not much for iphones - the only one I know of is the Apple Airport Utility, which does have a wifi scanning option. No graphical output, and it does insist on looking for apple airport routers, but it will do the job.
