Solution to replace my Spectrum router
Newest spectrum router in office, wife has signal stability issues in living room about 60 feet from router, also 2 outside cameras have poor signal, about 45 ft from router on outside of rock wall, ...

Rock is great at blocking wifi.
How big is your home?
What are the interior walls made from?
What speeds do you pay for?
Do you game?
How much streaming do you do?
Whats your budget? (pointless to recommend something outside of the budget)

Sheetrock is just the name of a specific brand of drywall - often used generically. It is gypsum plasterboard, and has minimal impact on wifi signals.
The exterior rock wall is another matter - it will definitely block wifi.

An Orbi would help inside. Though if it is practical to run an ethernet cable to the living room, you could also use a wifi extender there that would be cheaper.
The outdoor cameras might be more difficult. If there is a window that faces the cameras, you could put an extender there (or an orbi mesh element). Or get an outdoor wifi solution, and run ethernet to it. If the extender uses power-over-ethernet, then you'd need to put a power injector indoors (to add power to the ethernet cable).

An orbi 370 with two mesh elements total would run about $200. The 770 model with 2 mesh elements would perform better, but would cost about $500. A three mesh element 770 would cost abuot $600. All these are USD prices from https://www.netgear.com/home/wifi/mesh/ - you might be able to find something cheaper at other storefronts.
The puzzle here is whether the three mesh system would be enough to reach the outdoor cameras through the rock wall. It might not be.
