When there is a problem with the 5G WiFi, can devices still connect to the system at 2.4G?
This model has the ability to set up a WiFi schedule. Can you verify that no schedule has been defined? The Product Data Sheet mentions the ability to control the router with voice, using Alexa or Google Voice. Is this feature enabled?

The downloads page for this model shows the same Firmware version.
There are not parental controls (schedule) set, and smart device integration is disabled.
The slower band continues to work despite the 5GHz going down. I’ve also set it to 3 different unused channels based on the other networks around me.

Has a factory reset and setup from scratch been performed since last FW update? A complete pull of the power adapters for a period of time after the factory reset then walk thru the setup wizard and setup from scratch with a wired PC and web browser. https://kb.netgear.com/22697/How-do-I-install-my-NETGEAR-router-using-the-router-web-interface

Yes, that was my last attempt. The first time was via app, the last was from this wired desktop + web interface. Also gave a few minutes unplugged each time I tried factory reset.
As of this morning, it's made it from yesterday morning to now with a functional 5GHz band, I guess I'll see if it makes it all day or not.

What channels are you using? Try 1 and 40 or 11 and 48.
