I have Spectrum and my plan is 600 Mbps. The modem says it maxes out at 600 for the 5GHz band.

You won't hit 600mbps over 5ghz on that device. 300-400mbps are about what the 5ghz will max out on for actual throughput. (not the link speed, that actual throughput)
Might be coming up on time for an upgrade as spectrum is only approving that device to 500mbps anymore.
You could still use that modem but they might not approve it to the faster speeds.
You could put it in modem only mode and connect any router you choose it it for upgrading.

I didn't realize the ISP could limit based on the device to a speed lower than my plan, that's good to know. Going back to one of your original comments where you said 300 should be plenty for streaming, does this mean my issue could potentially have nothing to do with my hardware and plan (and this is not the place to get it sorted)?

They're not "limiting" your speed.
the modem is only approved up to 500mbps. You might get a little faster than that.
The 300+ speed is your wireless. that's an older generation AC device that is a modem/router combo device. their wifi wasn't as fast as a dedicated router devices. so it was slower. And that generations wireless was only around 300-450mbps depending on the router you had. so that's why I listed those speeds for it.
It might still be fine. Easy check? For a test (you can change it back), rename the 2.4ghz/5ghz bands to something different. This prevents your other devices from connecting. then connect the VR headset to the 5ghz and try it. That means only the single device is connected and using bandwidth. If it streams fine, it could be a congestion issue. If it still doesn't, then it might be time for an upgrade.

I got the new HTC Focus Vision. I saw online that I'm not the only person with initial connection issues but following their advice I only saw improvement on the USB connection, not the wifi.
