CAX 80 as a wireless router only
I am having to use Optimum and the only way to use my Apple TV 4K with their app for live tv is to use their modem and an altice one. Their router doesn’t cover my house but my CAX80 does so magnifice...

No, the CAX80 requires the ISP coax line to be connected for it to work in Gateway router mode or Modem only mode.

If I bought an Orbi mesh router then I could disable the router option through the advanced settings on the CAX80 then setup the Orbi mesh with same network etc so when/if I am forced into the modem from Optimum it would be a simple swap from one modem to the next?

No. You won't be able to use the CAX at all. If you can't have it connected to the cable connection for modem, it'll go in a boot loop when it boots up and doesn't detect a connection.
If you have to use Altice's modem/router, then the CAX is a bit pointless for you.
