Sorry, its a Nighthawk X6S AC3600 Triband Model # R7960P.
If my CAX80 is in my office, would it do anything to hook up the X6S router in my office via ethernet, or is there another way to use the old existing phone outlets in every room?

Use existing phone outlets in other rooms, no.
You need an Ethernet cable between your new CAX80 and your R7960P configured as an access point. Not much good with both in the same room.
If an Ethernet cable run between rooms or floors is not possible, Netgear does make devices called power line extenders. They consist of two pieces, one is plugged in to a wall receptacle in the room where your CAX80 is located and an Ethernet cord is connected between the two. The second of the pair is plugged into a wall receptacle where you want to extend Wi-Fi and Ethernet connections.
