Check the specification details on the 9 year old splitter you referenced. Make sure it can pass signals at 1 GHz or above. Required for the upgraded Xfinity Enhanced Speed Network. Your CM3000 will connect to this network, the CAX80 still connects to their old standard network.
On your downstream bonded channels starting with channel 16, the power levels are very inconsistent. There is a bad coax amplifier or two between your residence and the Xfinity node where the connection is converted from fiber to coax. Xfinity has installed a lot of new hardware, coax amplifiers and nodes, as part of their Enhanced Speed Network upgrade. Some of the new hardware is not working well across the full frequency band.
Xfinity makes this situation very difficult to push up the technical support chain. It is unlikely anyone you can talk to over the phone will understand the details.
You stand a better chance of getting help with a technical support post over on the Reddit/Comcast_Xfinity forum. https://www.reddit.com/r/Comcast_Xfinity/
Regardless, you are still going to run into the “not our hardware” attitude.
