Things to do with a C7000v2
I'm just asking if this makes sense or not, if I plugged an axe 1800 in to a c7000v2 1900 and get wifi 6? it feels right but I've made dumb choices with feels right.

Your AXE 1800 does not come up as a proper model number. Look on the label.
Your C7000V2 can be configured for modem only mode, then you can connect your router to accomplish routing function and also have Wi-Fi 6.
Go to the Downloads section above to get the C7000v2 user manual. See page 18.

As Kitsap says, you can use it as a modem only device.
Plus you don't say what exactly you're wanting to connect to it.
If its an extender or access point, you can connect them to it.
Or if you're wanting to connect a different router, you can either leave the c7000 in router mode and the new router in access point mode or you can follow the putting the c7000 in modem only mode. Kind of up to you.
But tough to tell you without specifics of what you're wanting/connecting
