Wondering if I can use my C7000v2 as just the wireless router?

No. Without an Ethernet WAN/Internet port, a Cxxxx model is useless
as a simple router.
It should be possible to configure a Cxxxx model as a wireless access
point, and use it that way with some other router, but that's no help
when you need a router.

On the plus side the CM1150V modem for me is rock solid.
I have found the C7000v2 rock solid as well! Just wish my circumstances which are not allowing me to use it were different.
