Okay, I figured out how to access the extender through my computer. However, I have found that I am ALREADY running the most current firmware (1.1.0.12).
So...what should I do?

Proceed to follow DarrenM's suggestion to change the channel used by the extender for it's Wi-Fi network. You should be able to change it on the extender under Settings -> WiFi. See page 20 in the manual (link).

What am I missing? Every single time I direct my web browser to the www.mywifiext.net address (either wirrelessly or via Ethernet) I get the same screen, with the following tabs:
Setup Wizard
Add WPS Client
Setup
Maintenance
Advanced
Not one of those tabs contains "Settings" nor "WiFi" controls. And in regards to your reference to page 20 in that manual, I also see nothing representing a "Menu" option.
Any ideas why I'm so far off?

Perhaps you have a different version. The manual I linked to is for the WN2000RPTv3, which what you indicated in your post. If you have a WN2000RPTv2 or a WN2000RPTv1, then the menus are different. Actually, I'm not sure that you can manually change the channel on these versions. It's possible that channel selection is handled automatically. You may have to poke around under Setup > Wireless Settings. You can also look at Maintenance > Status and Maintenance > Network Devices to determine if the extender's WLAN interface is up, whether any devices are connected, and whether the extender has a connection to the router.

Now were're onto something. I'm not sure where I determined the model the first time, but upon closer inspection to the back this morning, when I was working with it, I did see that it's the "V2" model. So, yeah, that would be a factor.
In the Genie's "Status" menu, it does indeed list the channel as being auto(1). So, that would jive with what you mentioned. Although, I have yet to see it change to anything other than (1).
The real question is how can I change to a much older firmware version? The router's default was for auto update, which leads me to believe that all my troubles might have started as a result of the newest firmware. Up until late last year / early this year, there were no issues whatsoever with the Internet dropping out on us.
