I believe you should be able to use the same SSID as the main network. Just be sure to use a different channel.
AFAIK, the EX7000 cannot simultaneously support a guest network in addition to the main network. It would have no way of segregating the traffic while backhauling it to the router.
You could probably use a second extender just for the guest network.
If you mean to make the SSID hidden, then there's really no value. It's better to keep it visible.
