I have ATT Uverse and do not want to depend on their wifi router. I cannot put the Uverse router in bridge mode (that I'm aware of) so I have the Nighthawk plugged into the Uverse Router and Nighthaw...

You meant the AP mode?
Can I combine the 2G and 5G SSID without causing problems? I would prefer to have 2 connections in my home, not 4. I'm even thinking about adding a 2nd EX600 and I'm assuming that would make 2 more networks (needing the wired features of the EX600 in my office).
You can use same SSID on each band on your R7000 and have your extender _ext SSID to be same should be final... You can add more extender joint the network but do connect behind the extender back to back. That may works but also may also cause throughput.
You can keep the throughput to on single extender to main router will fast lane for performance but I would not suggest back to back.
