I hope you have solved your problem by now, but here is another possibility that I came across. On my Android phone I have an app called Wifi Analyser, and I noticed that even standing just a few feet away from the router that every now and then the 5G signal from the router would drop and then return automatically. So that would explain why the extender would fail also.
Since then we have had a new and better router and the problem has not arisen in 6 days full time. Hope this helps!
