Thanks for the clarification.
Try having different UniFi AP SSID names. For example UniFi AP_1, UniFi AP_2, etc.
It could be that the extenders are having difficulty recognizing which UniFi AP to connect to because they all have the same SSID.

I'm not able to change the SSID of the individual AP's. While not able to resolve this, we have got a workaround by using different bits of kit. Currently we have:
2 x Netgear WN3000RP-200UKS
1 x Netgear WNCE4004 servicing two devices
1 x Linksys RE3000
Using this combination, things have been stable. I imagine having any combination of wireless client/bridge would be fine, but it would have been preferable to standardise using one device. Going forward for our other sites, I think we will go down the route of structured cabling.
