I have right now 200/20 (telenet cable in Belgium). The R7000 is giving me full speed on my Xperia Z2 tablet, over 5GHz, at least according to speedtest.net, so I'd say you'll be well served with it with your current connection. On the tests that I did with iperf I managed to get close to the theoretical speeds on 2.4GHz and 5GHz, so it should also handle your future speeds. Of course, it will depend on the size of your house, wall materials, neighbouring WiFi, etc.
As for the firmware, I was running the v1.0.6.28 beta for some time, and am now on the 1.0.6.54. If you don't have any arlo cameras, I'd recommend you to stay with 1.0.5 for now, as you won't gain much with the beta.

getting the wifi speed purely depends on the client. Throughput is main factor one can acheive upto 45% of the connection rate. So plan accordingly. WIth n 300 Mbps you cant get 200Mbps only close to 150Mbps.
But with ac 5GHz yes you can reach upto 400Mbps so 200 is easily achievable.

I also run an R7000 on Telenet (Belgium) business abo 240/30. It has no issues reaching those and according to SNB review, it has one of the highest throughput (WAN -> LAN and LAN -> WAN) of any AC1900-class router

I have speeds of 230/23mb up using Time Warner Cable Max. My R 7000 has no problems at all with the stock firmware.

I see the R7800 is only £10 more than the R7000 on Amazon yet is far Superior
R7000 = £140
R7800 = £150
