IoT is under Advanced > Advanced Setup > Wireless Settings. Then you’ll see a tab for IoT Network.

Ideally, yes, but if they completely isolate that from the main network, then things may not work properly. Even without the network being completely isolated, I just find having a dedicated IoT network for 2.4GHz and 5GHz using WPA2 much more convenient as I can force my main 2.4GHz and 5GHz networks to only use WPA3 and use the IoT one for devices that won't work with WPA3.

This could be achieved with a guest network too.

I could, but as the guest network isolates things from my main network this can cause all sorts of issues with my IoT devices. Apps may fail to discover devices, devices can fall back to cloud only control and have slower response time because of that, and if there's an internet outage = no control. Apple HomeKit also needs to be on the same LAN, so that'll probably end up breaking on a guest network.

You could select the option to enable access with other devices when creating a guest network. This wouldn't isolate the guest network from the main network.

There is a check box to allow GN devices to see each other and allow access to the main LAN network.
IoT network only supports 2.4 and 5Ghz. 6Ghz is not supported on the IoT network.
