I believe dropbox app will just pick one interface, though that depends on how the app is written.

Yes. If the app is making one connection to the dropbox cloud, then that connection will go over one interface. If the app doesn't select the interface explicitly, then Linux will select it - most likely picking the first one.
If the app is making multiple connections, then it might be smart enough to use both interfaces (or not).
My guess is that the app isn't that sophisticated, as most folks don't have two ISPs.
