Deleting Files
How do I get files back that I have deleted from the NAS by mistake?

Did you have snapshots enabled on the share?

Snapshots were disabled to save space, otherwise I can go into that share and eable snapshots and set quota?

If there are no snapshots that hold the file, then recovering a deleted file is problematic. There is a btrfs-undelete script out there, but I've never attempted to use it.

Enabling snapshots can help you recover a deleted file. So can a backup - and if you use the NAS as primary storage you should have a backup plan in place. RAID isn't enough to keep your data safe.
I'm not sure why you are mentioning set quota. If you are wanting to manage the snapshot space, the best approach is to use the custom snapshot setting, and set the desired retention. You can tune that over time to control the snapshot space.
