For future drive swaps, I am considering 16TB (Seagate Ironwolf). I can't find any mention in the community of anyone using this drive in either unit. Should I expect the 16TB drives to work, and will I see the full capacity, or is there some limit I am going to hit (either on an individual drive, or in total)?

There is no known capacity limit, and there are folks here using 16 and 18 TB drives in OS-6 NAS. You should see full capacity, as long as you have two of the largest size installed (assuming single redundancy RAID).  You'd need 4 of the largest size if you are using dual redundancy (RAID-6).

FWIW, the 16 TB Ironwolf is on Netgear's compatibility list for your NAS.  Though the HCL is viewed more as a guide now - any CMR NAS-purposed or Enterprise SATA drive should work.
